    Recipe Introduction

    This makes delicious cinnamon toast. Next time, I might add a cinnamon and brown sugar swirl in the middle. I baked it in my oven in a 9 in. stoneware loaf pan at 375 for about 32 minutes (I had to shield the loaf with foil to keep it from over-browning towards the end). One hint...let it mix for atleast 5 min. or so before you try to correct the dough consistency. I added a splash of buttermilk and another chunk of banana because I thought it looked dry, but then I had to go back and add additional flour because I made it too wet. My bananas were over-ripe (brown skin) but not total mush. Using black skinned bananas would probably only make it a little sweeter. Oh, and I added a splash of pure vanilla extract and a T. of vital wheat gluten.

    List of Ingredients

    1 1/2 cup sliced ripe banana
    1/2 cup buttermilk
    2 tbsp oil
    2 tbsp honey
    2 cup Bread Flour
    1 cup Whole Wheat Flour
    1 1/4 tsp salt
    1 3/4 tsp bread machine yeast

    Recipe

    SELECT loaf size.

    ADD ingredients to machine according to manufacturer’s directions.

    SELECT White Cycle and Light Crust setting.

    LARGE LOAF (1 1/2 lb/3 cup or 2 lb/4 cup machine)
