    THAI PORK SATE W/PEANUT DIPPING SAUCE

    List of Ingredients





    1/3 c. + 1 TBS. minced lemongrass, cut
    from bottom 6" of stalk
    3 TBS. lime juice
    2 TBS. dark brown sugar
    1 TBS. soy sauce
    3/4 lbs. pork, cut 3" long,1/2"
    thick
    1+ c. chicken broth, or stock
    1/2 c. creamy peanut butter
    1/2 c. chopped onion
    1 TBS. coriander seeds
    1/2 jalapeno, seeded and minced
    Minced green onion tops

    Mix 1 TBS. lemongrass, 1 TBS. lime juice, 1 TBS. sugar, soy and garlic in large bowl. Add pork, toss to coat with marinade and let stand 30 minutes to 1 hour. Meanwhile, mix rest lemongrass and sugar with 1 C. broth, peanut butter, onion, coriander and Jalapeno in heavy medium pan. Bring to boil, whisking frequently. Transfer misture to blender & puree. Strin into heavy small
    saucepan, pressing on solids with back of spoon. Discard solids. Simmer til reduced to thick sauce, stirring frequently, abou;t 6 minutes. (Can be made 1 day ahead, kept covered and chilled.) Preheat broiler. Thread 3 pork strips on each of 12 wooden skewers that have been soaked in water 30 minutes. Broil til cooked d thru, about 3 minutes per side. Pour sauce in bowl set in center of platter. Sprinkle with green onion. Surround with pork skewers. Makes 6 appetizer servings of 2 each.
