RUTH'S BBQ RIBS W/BLACK JACK SAUCE

List of Ingredients
5 lbs. beef short ribs
3 cups Black Jack Sauce****
***Black Jack Sauce*** :
1 cup strong black coffee
1 cup Worcestershire sauce
1 cup ketchup
1/2 cup vinegar
1/2 cup brown sugar
2 cups chopped onion
1/4 cup minced garlic
3 TBS. chili powder
2 tsp. salt
Recipe
For Black Jack Sauce:
Combine all ingredients in saucepan and simmer 25 minutes. Strain and puree in blender. Referigerate between uses. Yields 5 cups.
For Ribs:
Place ribs in flat pan or dish. Pour sauce over ribs. Coat both sides . Pierce meat with
a fork. Marinate 8 hours. Remove from marinade. Brush excess off meat, to avoid burn-
ing. Broil over hot coals for 10 minutes. Brush with marinade. Cook 4 to 5 minutes more.
Heat remaining sauce. Serve with ribs.
Makes 4 to 6 servings.
