    CRAWFISH PIE

    This is really great! Try it with shrimp, too!

    List of Ingredients

    2 ready made pie crusts

    1/2 stick butter
    1 c chopped onion
    1/4 c each chopped red and green bell peppers
    1/2 c chopped celery
    1 T minced garlic
    1 1/2 tsp salt
    1/2 tsp cayenne
    1/4 tsp black pepper

    1/2 c chopped tomatoes
    1 lb peeled crawfish tails
    2 T chopped parsley
    2 T flour
    1 c water

    Recipe

    In large saute pan heat butter and saute
    onion, bell peppers, celery, garlic, salt,
    cayenne and black pepper. Saute 8 min or
    till golden and wilted. Add the tomatoes and
    cook for 6 min. Add crawfish tails and
    parsley. cook about 4 min stirrring
    occasionally. Dissolve flour in water and
    add to pan. Stir for about 2 min or till
    mixture thickens. Remove from heat and cool
    30 min.

    Place one pie crust in pie pan sprayed with
    pam. pour in filling. place other crust on
    top and crimp edges to seal. brush top with
    egg wash. Bake 400 degrees for 45 min or
    till deep golden. Remove from oven and let
    rest 10 min before slicing.
