List of Ingredients
1 cup boiled rice (cooked w/beef or chicken stock & water)
1/4 to 1/2 lb. cooked ham, diced
4 or more oz. cooked chicken, shredded
1/2 to 1 lb. andouille or smoked sausage, sliced, cooked
1 green bell pepper, diced
1 med. onion, chopped
1/2 cup chopped tomatoes or 1 small can tomato paste
1/2 tsp. (give or take) Tony Chachere's Creole Seasoning
2 TBS. olive oil
Salt & pepper to taste
Recipe
Saute green bell pepper & onion in olive oil in heavy large cast iron skillet. Remove from pan, drain & add sausage, ham & chicken. Cook til done. Add remaining ingredients, rice, etc. including the cooked onion & bell pepper & cook til heated through, about 20 - 30 min. Stir frequently. Taste for seasonings. (May also add sauteed garlic & a bay leaf or 2!)
Makes about 4 servings.
