JAMAICAN CURRIED GOAT

Adapted from verbal instructions by a Jamaican lady we met outside Negril
Recipe Introduction
These are from notes I quickly jotted down. She recommended using a pressure cooker (which I don't own)
for this to really tenderize the goat meat, and said it takes much less time to cook.
List of Ingredients
2 lbs.goat stew meat, chunked (also called "mutton" in the Ja Hills)
2 large onions
1 TBS Vegetable oil
2 Cloves garlic, chopped
2 Scallions, chopped
2 TBS Allspice
2 tsp ginger, freshly chopped
1/2 cup chicken broth
1/2 cup or more water
1 bunch herbs of your choice (ie parsley, thyme, etc.)
2 TBS curry powder
2 TBS tomato ketchup
Salt and Pepper to taste Recipe
1. Heat the vegetable oil in a large pot, add the garlic,
scallions, curry, allspice, and
ginger; saute quickly & add the chicken broth.
2. Cook for about 5 minutes then add the goat and
remaining ingredients.
3. Simmer for 1 1/2 -2 hours or until meat is tender. Taste for seasonings.
Serve with rice. Makes about 6 servings.
