    SPINACH W/ SOUR CREAM CASSEROLE

    *NOTE* This is a very old recipe which I now do in the microwave. Cook the casserole, covered with plastic wrap, on HIGH approx. 4 minutes. Uncover & cook about 4-5 mins. longer.

    List of Ingredients




    1 (10oz or 283g) pkg. frozen chopped spinach
    1 TBS. finely chopped or grated onion
    2 eggs
    1/2 c. sour cream
    1 c. grated Romano or Parmesan cheese
    1 TBS. flour
    2 TBS. butter
    Salt & Pepper to taste

    Recipe




    Cook frozen spinach in water with onions until thawed. Drain. Fold flour into sour cream. Beat eggs & mix rest of ingredients with drained spinach and onions. Bake in greased casserole for 20-30 minutes in 350F oven or til center is set. Do not overcook.

    Serves 4.
