SQUASH & CHEESE CASSEROLE

6 medium yellow squash, sliced in thin rounds
1 medium onion, chopped
2 tsp. butter
1/4 cup milk
1 cup Velveeta, cubed
Salt & pepper to taste
Recipe
Put squash in large pot half-filled with water. Boil 10 minutes, add onions and boil another 5 minutes
or til tender. Drain in colander. Melt butter, add milk and Velveeta cubes. Stir til thickened. Pour squash and onions into pot and stir well to combine. Add salt & pepper to taste. Heat through .
Serves 4.
