    1 stick butter
    1 med. onion, chopped
    1 cup chopped celery
    1/2 cup green bell pepper, chopped
    2 cups breadcrumbs
    1/2 lb. crabmeat
    1/2 tsp. dried thyme
    1 - 2 bay leaves
    Dash cayenne or Creole/Cajun seasoning
    Salt & pepper to taste
    Dash paprika
    1 TBS. chopped parsley
    1/2 cup buttered breadcrumbs

    In medium skillet, saute onions, green peppers and celery in butter. Add about 2 cups breadcrumbs, cook 5 minutes. Add rest of ingredients, except parsley, paprika & buttered crumbs. Mix thoroughly. Heat through and remove from stove. Take out and discard bay leaves. Pack stuffing into 4 crab shells (or casserole dish. )Top with buttered crumbs, parsley and paprika. Bake at 350 in a shallow dish for 15-20 minutes. Serves 2-4.
