    FROZEN CANTALOUPE CREAM

    List of Ingredients




    1/2 c. water
    1/2 c. sugar
    1/2 c. fresh orange juice
    1 small cantaloupe
    1/2 c.+ whipped cream (some needed for garnish)
    Grated orange rind (Sprigs of mint are pretty, also)

    Recipe



    Combine water, sugar and orange juice in small saucepan; bring to boil, stirring well. Boil 5 min., stirring occasionally; set aside to cool.

    Peel and cube cantaloupe into small (1/2") chunks. Place in blender & process til smooth.
    Pour into bowl and stir in cooled juice mixture; fold in 1/2 c. whipped cream.

    Pour cantaloupe mixture into a 10x6x2" baking pan.

    Freeze 1 1/2 hours or til slushy. Remove from freezer & process in blender til smooth. Repeat procedure. Return to freezer and freeze 2-3 hours or til firm.

    Spoon into dessert dishes and garnish with additional whipped cream and orange rind, if desired, for garnish. Yields 6-8 servings.
