GRILLED MARINATED VENISON LOIN CHOPS

Ingredients
8 venison loin chops
salt & pepper
Marinade/Grilling Oil
1 pint olive oil, more or less, to taste
4 cloves garlic, slightly browned or roasted
1 sprig rosemary
1 sprig thyme
2 teaspoons black peppercorns
Grilling oil: Combine all of the ingredients and steep for 12 hours. Marinate chops overnight, if desired.
Prepare grilling surface by rubbing lightly with oil. Season chops with salt and pepper. Baste them with grilling oil. Grill chops over high heat, basting always after turning. Let meat rest for two minutes before serving.
