    QUAIL BAKED IN WINE

    Rub salt & pepper on 8 quail; brown lightly in butter or olive oil. Remove quail from pan and place in a buttered casserole dish that has been pre-heated. Put birds in oven at 350 degrees & pour 1 glass of white wine over them.

    Dice 1 carrot, 1 small onion and 2 TBS. green pepper; add 1/2 cup chopped mushrooms. Put these into the butter left from browning the quail. Let cook slowly for 5 minutes, then add 2 TBS. flour. Blend all thoroughly, then slowly stir in 2 cups chicken stock into these ingredients. Stir continually so the sauce will be smooth. Season to taste with salt & pepper.

    When quail have cooked for about 30 minutes, pour the above sauce over them, cover the casserole and bake for about 30 minutes longer, or til tender. Serves 4.
