QUAIL MAGNIFICENT

List of Ingredients
1/2 tsp. poultry seasoning
1 TBS. + 1 tsp. molasses or maple syrup
1 clove garlic, pressed
1 tsp. lemon juice
4 medium carrots, cut up
1/2 lb. mushrooms
2 green onions, sliced
1/2 c. dry sherry
Recipe
6 quail
1/2 tsp. salt
1/2 tsp. pepper
1/3 c. flour
Vegetable oil for frying
2 1/2 c. chicken broth
1/4 tsp. cinnamon
Sprinkle quail with salt & pepper. Dredge in flour. In a large heavy skillet, brown quail on both sides in hot oil. Remove quail & drain off oil from skillet. Return birds to skillet.
Combine broth, cinnamon, poultry seasoning, molasses, garlic & lemon juice, mixing well. Pour over quail. Reduce heat, cover and cook birds for 30 minutes. Add Remaining ingredients, cover, cook an additional 20-30 minutes. Yields about 3 servings.
