MEXICAN "PIZZA"

List of Ingredients
6 oz. ground beef
1/2 pkg. taco seasoning
2 10-inch flour tortillas
1 c. shredded Cheddar cheese
1 c. chopped tomatoes
1/3 c. chopped green onions
1/4 c. chopped black olives, pitted
1/4 c. chopped green olives
1 1/4 c. grated Monterrey Jack cheese
1 1/2 TBS. sliced jalapeno peppers
Recipe
Cook beef and taco mix in heavy skillet over medium heat, til beef is browned, crumbling with a fork, about 5 minutes. Cool and drain. Preheat broiler. Heat heavy large skillet over high heat. Add 1 tortilla and cook til crisp, turning occasionally, about 2 minutes. Remove from skillet. Cook 2nd tortilla til crisp, as before. Leave in skillet and reduce heat to medium. Sprinkle cheddar over tortilla, top with 2nd tortilla. Continue cooking til cheese melts, pressing with spatula, about 2 minutes more. Transfer to 13" pizza pan. Top with cooked beef, then the Jack cheese. (Can add jalapenos now) Broil til cheese melts, about 3 minutes. Top with rest of ingredients and cut into wedges. Serves 1 or 2
