Chicken Roll Ups Stuffed with Prosciutto & Parmesan
List of Ingredients
2 Chicken Breasts (boneless, skinless, and pounded flat)
2 Slices Prosciutto (very thin)
2 T Parmesan Cheese (grated)
1 T Parsley (chopped)
Pinch of Oregano
Pinch of Thyme
Salt and Pepper
Toothpicks
Recipe
Lay out flattened chicken. Lightly season with oregano, thyme, salt and pepper. Sprinkle on the parmesan. Sprinkle on the parsley. Place 1 slice of prosciutto on each. Roll each one up unto a bundle and secure with toothpicks.
In a large skillet, brown all sides of the chicken rolls and remove to a baking sheet. Cook in a preheated 400 degree oven for ten minutes. Remove and let rest a bit. Remove the toothpicks and slice cross-wise into wheels. If desired, make a light wine sauce or beurre blanc and drizzle over. Serve with garlic roasted potatoes.
