    CANYON RANCH GARLIC MASHED POTATOES

    3 medium russet potatoes
    (2 1/4 pounds)
    1 cup non-fat milk
    2 garlic cloves, pressed or minced, or to
    taste
    1 tablespoon chopped chives
    1 teaspoon salt
    1 teaspoon fresh ground black pepper
    1 tablespoon extra virgin oil

    Recipe



    1. Peel the potatoes and cut them into
    large cubes. Place them in a medium pot of
    boiling water to cover and partially cook,
    about 10 minutes.

    2. In a medium-sized saucepan over medium-
    low heat, bring milk to a simmer.

    3. When the potatoes are partially cooked,
    drain well and transfer to the preheated
    milk. Continue cooking until the potatoes
    are soft, about 15 minutes. If the potatoes
    become dry, add a little more milk.

    4. Combine the potatoes with the remaining
    ingredients. Mash with a hand masher or an
    electric mixer until smooth.
