    SPINACH SAUTEED WITH GARLIC

    3 tablespoons olive oil
    6 cloves garlic, minced
    1 1/4 pounds spinach, washed well, tough stems removed and discarded
    Salt and freshly ground black pepper
    Lemon juice or balsamic vinegar (optional)

    Recipe



    1. Heat the olive oil in a large nonreactive sauté pan set over medium heat.
    2. Add the minced garlic and sauté for 1 minute.
    3. Add the cleaned spinach, a few tablespoons of water, and season
    to taste.
    4. Cover and cook, stirring and turning, until the greens are tender and slightly wilted, about a minute or two.Taste the greens for doneness to your liking, and adjust the seasoning with salt, pepper, and a sprinkling of lemon juice or balsamic vinegar, if desired. Serve immediately. Serves 4.
