SUMMERTIME OKRA, CORN & TOMATOES

List of Ingredients
3 c. sliced fresh okra
2 c. fresh corn cut from the cob
4 med. tomatoes, peeled & chopped
2 bay leaves
3 TBS. chopped fresh parsley
1/2 tsp. salt
1/4-1/2 tsp. pepper
1/2 tsp. gumbo file' powder
1/8 tsp. hot sauce (Tabasco)
Recipe
Thoroughly rinse okra under running water; drain well. Combine okra and next 6 ingredients in large skillet. Cover and simmer 10 minutes; uncover and simmer 20 minutes more. Stir in file' powder and hot sauce; cook, stirring constantly for 1 minutes. Remove bay leaves before serving. Makes 5-10 servings.
