    Pennie gives credit to a former co-worker in Louisiana for this recipe. She and Richard brought this to the Lost Cajuns family picnic in 2006.

    List of Ingredients




    1 onion, minced
    1/2 cup bell pepper, finely chopped


    1 can cream style corn
    1-1/2 cups grated cheddar cheese
    3 tsp. baking powder
    2 cups yellow corn meal
    3/4 cup chopped green onions
    1 cup milk
    3 eggs
    1/2 cup cooking oil
    1 tsp. salt
    1/2 tsp. baking soda

    1 lb. crawfish tails

    Recipe



    Saute onions and bell pepper in small amount of butter. Allow to cook until onions are transparent. Set aside and mix other ingredients.

    Add cooked onions and peppers. Stir in crawfish

    Put into lightly greased pan. Bake in preheated 400 degree oven for 35-40 minutes.
