    Grilled Curried Pineapple

    List of Ingredients


    • 1 medium pineapple
    • 1 T. margarine or butter, melted
    • 1 T. packed brown sugar
    • 1/4 tsp. curry powder
    • 1/2 cup plain yogurt
    • 2 T. toasted coconut


    Instructions


    1. Cut pineapple crosswise into six 3/4 inch think slices. Stir together margarine, brown sugar, and curry powder.
    2. Grill pineapple slices on an uncovered grill directly over medium coals for 6-8 minutes or until heated through, turning once and brushing once or twice with margarine mixture.
    3. To serve, cut slices in half. Serve warm topped with yogurt and coconut.
