Grilled Pork w/ Melon Tomato Tumble

List of Ingredients
- 3 T. olive oil
- 3 T. wine vinegar
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1 lb. pork tenderloin
- 1 small cantaloupe or honeydew melon
- 1 cup red, yellow, and/or orange cherry and/or grap tomatoes, halved or quartered
- 1 small red onion, thinly sliced and halved
- 1/3 cup fresh, small mint leaves
Instructions
- In a small mixing bowl, whisk together oil, vinegar, salt, and pepper. Remove 1 T. of the mixture and brush it over the tenderloin. Reserve remaining oil and vinegar mixture for use in Melon Tomato Tumble.
- Place the pork tenderloin on a grill rack directly over medium coals. Grill, uncovered, about 30 minutes or until 160 degrees F, turning every 5-6 minutes.
- Meanwhile, cut melon in half. Cut one of the halves into bite sized pieces. Cut remaining half into 4 wedges. Cover and chill wedges until serving time.
- In a medium bowl, combine the melon pieces, tomatoes, onion, and mint. Add remaining oil and vinegar mixture. Toss to coat.
- Remove pork to a cutting board. COver and let pork rest for 10 minutes. Slice meat on the diagonal and serve with the tomato mixture spooned over melon wedges.
