Alaska Seafood Louis

List of Ingredients
- 1-1/2 lbs. Alaska Dungeness, King, or Snow crab OR 12 pz. Alaska pink shrimp*
- 2 large tomatoes, cut in wedges
- 2 hard cooked eggs, cut in wedges
- 1 cucumber, sliced
- 1/2 cup ripe olives
- lettuce
- lemon wedges
- Louis Dressing
- * If desired, 12 oz. poaced Alaska cod, halibut, pollock, rockfish, sablefish, or salmon may be substituted.
Instructions
- Arrange seafood, tomatoes, eggs, cucumber, and olives on lettuce lined plates. Garnish with lemon. Serve with Louis dressing. Serves 4.
- For Louis Dressing: Combine 1 c. mayonnaise, 1/4 c. chili sauce, 2 T. chopped green onion, 1 T. lemon juice, and a dash of bottled hot pepper sauce. Cover and chill. Makes about 1-1/4 cups.
- Fluffy Dressing Variation: Beat 1/4 c. heavy cream until soft peaks form. Fold into Louis Dressing. Cover and chill. Makes about 1-1/2 cups.
