Cannelini Chef's Salad

- 2 cans Progresso Cannelini beans
- 1/3 cup olive oil
- 3 T. wine vinegar
- 1 clove garlic, minced
- 2 T. oregano leaves, crumbled
- 1 tsp. salt
- 1/4 tsp. ground black pepper
- 3 quarts torn iceberg letuce
- 1/4 lb. sliced ham, slivered
- 2 oz. sliced salami, slivered
- 1/4 lb. mozzarella, slivered
- 1/4 cup sliced roasted peppers
Instructions
- Drain cannelini beans thoroughly. Meanwhile, in a medium bowl, mix together olive oil, vinegar, garlic, oregano, salt, and black pepper. Stir in beans. Place lettuce in a very large bowl. Spoon beans in a circle close to the side of bowl. Arrange ham, salami, cheese, and roated peppers in any desired pattern over the lettuce. Toss just before serving. Serves 6.
