Classic Rice Salad

List of Ingredients
- 3 cups cook rice, cooled
- 1/2 cup finely chopped onion
- 1/2 cup chopped sweet pickles
- 1 tsp. salt
- 1/4 tsp. black pepper
- 1 cup mayonnaise
- 1 tsp. prepared mustard
- 2 oz. jar pimientos, diced
- 4 hard cooked eggs, chopped
- lettuce leaves, optional
Instructions
- Blend all ingredients thoroughly. Chill. Serve on lettuce leaves, if desired.
