Fruit Salad

List of Ingredients
- 3/4 cup pineapple juice
- 1/4 cup sugar
- 1/4 cup water
- 3 T. cornstarch
- 2 egg yolks
- 2 T. white vinegar
- 2 apples, thinly sliced
- 1- 15 1/4 oz. can pineapple chunks
- 1 1/4 cups white grapes
- 1/2 cup diced dried apricots
- 1/2 cup walnuts
- 1/3 cup shredded unsweetened coconut
Instructions
- For dressing, combine pineapple juice and sugar in a saucepan. Cook over medium heat, stirring continually, until sugar is dissolved, about 4 minutes.
- Combine water and cornstarch in a small bowl and mix until smooth. Stir in egg yolks and vinegar. Add to pineapple mixture and mix well. Cook until thickened, about2-3 minutes.Remove from heat and let cool.
- For thesalad, combine the apples, drained pineapple, grapes, apricots, and walnuts in a large bowl and mix well.
- Pour the dressing over the salad and toss to coat. Sprinkle with coconut.
