Ed's Tarragon Lemon Chicken
I got this recipe from a friend of mine who is from Zambia.
I'm not sure where he got it from. The chicken has a very different taste to it and is quite easy to make
List of Ingredients
- Tarragon (needed)
- Chicken legs, thighs, or breasts, (needed)
- Salt (needed)
- 2 -3 Lemons or Lemon juice (needed)
- Garlic Powder (needed)
- Black Pepper (needed)
Instructions
- Rinse fresh or thawed chicken pieces under cold water for a few moments and put in a roasting pan.
- Squeeze lemons liberally over chicken parts. You want to have the chicken soaked with lemon juice.
- Dust chicken with garlic powder, then dust with tarragon, chicken should be quite speckled with this herb. Sprinkle a light amount of salt and add only a dash of black pepper on each piece
- Roast covered, (or uncovered, but beware that the tarragon will blacken and burn) for 40 minutes in an oven that has been preheated to 350 degrees.
- Serve with Rice Medly (see recipe in side dishes) and Cream of Mushroom soup.
