    Meat & Meusli 'Shepherds Peppers'

    Recipe Introduction


    When one is given some Green Peppers but has limited spices and ingredients. One has to devise 'makeshift' meals based upon what foods & spices are available. This recipe is one such recipe using this methodology. It may vary depending on what you receive from your food bank to cook with.

    In this recipe, I found myself making 'two' different recipes 'on the fly' with the ingredients I have. Some of these may need modifications based upon your own taste and available flavourings. I chose not to add rice to this mixture since most stuffed peppers contain boiled rice as a filler. You may choose to add a little to thicken the mix.


    List of Ingredients


    • 6 Green peppers
    • 1 Heaping breakfast bowl Muesli cereal (needed)
    • 1 can gravy - mushroom gravy this week (needed0
    • 1 Yam - needed
    • I Carrot - needed
    • 3 Potatos (or 1 Idahoan mashed potato mix) - needed
    • 1 can corn (needed)
    • 1 lb ground meat (this week's is Italian flavoured ground pork)
    • 2 tsp cooking sherry (needed) or other wine (not needed)
    • Seasonings (salt, pepper. onion salt, etc etc) needed
    • 2 tbs Kraft Dinner Cheese powder


    Instructions


    1. Cut tops off and clean out 3 green peppers, cut remaining three peppers in half lenghtwise, and clean out. Place peppers in a pot of boiling water for 6 minutes, remove and drain.

    2. Fry ground meat with a little salt or onion salt or other available spices. In this recipe I used some 'Italian Meat Loaf' frozen ground pork and added a slight amount of onion salt and black pepper.

    3. Fry pork in a pan until brown - set aside

    4. Cook potatos and mash/or prepare mashed potato mix and set aside

    5. Cook yam and mash it - set aside

    6. In a medium size bowl, empty 1 can Franco American or other gravy (I got mushroom flavour this time it was a little strong so I 'balanced it' with a yam)Add a couple of teaspoons of cooking sherry or wine.

    7. Add 1 heaping breakfast bowl of Meusli cereal to the bowl of gravy.(This week I got 'Our compliments Meusli with Dates, Blueberries and raisins in it)

    8. Add HALF of the fried ground meat to bowl of gravy and Muesli. Add mashed YAM. Mix all ingredients and STUFF FIRST 3 Green peppers till 3/4 filled

    9. Prepare mashed potatoes and add can of corn to this in a small bowl. Pipe onto stuffed pepper or just place a few tablespoons on top.

    10. SECOND set of peppers (6 halves)

    11. Place REMAINING ground meat into bowl with mashed potato and corn mixture. Grate in one small carrot add
      2 tbs Cheese powder from Macaroni/cheese dinner topping packet and mix thoroughly (optionally, add some cooked rice).

    12. Stuff remaining green pepper halves with this mixture and place in a 9 X 15 baking dish alongside first 3 peppers. Bake for 30 minutes at 350 degrees.



    Final Comments


    To flavour the second 'half peppers' you may choose to dust them with a little bit of 'Cheese salt' (see recipe under toppings) or other available sauces.
