    No Mayo Tuna Salad Sandwich

    Recipe Introduction


    Sometimes you have no eggs or oil to make Mayo, or you do not have mayo to make a Tuna Sandwich with. Today I opened a can of 'Light' tuna perhaps for the 2nd time in my life. I am quite used to eating White Tuna, and Sockeye Salmon, both are a rarity at the food bank, namely because the other varieties are less expensive and easier to donate. The taste of light tuna is quite 'gamey' and needs some adaptation. My circumstances today had me with no mayo and only light tuna. So I put this together to make a sandwich.


    List of Ingredients


    • 1/4 tin cream style corn - Needed
    • 1 Hambeurger roll or bread - Needed
    • 1 leaf of lettuce - Needed
    • 2 slices tomato - Needed
    • Juice of one orange - Needed
    • Onion salt - Needed
    • Black Pepper - Needed
    • Extra Virgin Olive Oil - Needed


    Instructions


    1. Drain tuna and put into a bowl. Add 1/4 (2.5oz) of the cream style corn and 1 tsp Olive oil.

    2. Squeeze the juice of one orange into bowl and add a dash of pepper and onion salt to taste.

    3. Serve on toasted, buttered bread, or a roll linedwith lettuce and add a few tomato slices.

    4. Reserve the rest of the cream style corn for another dish or serve on the side.



    Final Comments


    The reserved cream style corn can be used in my Meusli Stuffed Green Pepper recipe. Or, toss it in some soup, or fry it up with some mashed potatoes etc. etc.
