Mashed Rutabagas and Potatoes
You might get a turnip or some Rutabagas (large round turnips) from the food bank. These can be cubed (remove the wax layered skin first) and boiled until soft, then mixed with potatoes and minced garlic to make a different tasting side dish than regular mashed potatoes
List of Ingredients
- 1 5" Rutabaga - Needed
- 4 Potatoes - Needed
- 2 (or more) cloves garlic - Needed
- * Optional - I banana pepper - Needed(?)
Instructions
- Skin and slice the rutabagas into 1" cubes. Boil until soft.
- In a separate pot, skin and boil the same amount of potatoes as you have rutabaga (or turnip cubes)and boil these as well until soft
- Drain and mash Rutabagas in a large bowl, then add crushed garlic or garlic powder, and 2 tablespoons butter or margarine.
- Mash potatoes and garlic and rutabaga together for a side dish
- *Optionally, dice a Banana pepper into small bits and fry in a little oil, add this to the mixture to make
a zestier side dish
