Parisienne Potato Salad

Parisienne Potato Salad is different in that it is made with Oil rather than Mayonnaise. It is not creamy, it is shiny and clear. The trick seems to be to combine different types of potatoes, small ones, red ones, big ones, baking ones etc. to give the salad a nice appearance. It can be served hot as a side dish or refrigerated and served cold.
To spice it, you merely add the spices on hand, as spices are not that plentiful from the food bank since the impetus is on getting soups and bread etc. for a daily staple. You may also add chopped chives or other veggies to this.
Oil - Vegetable oil is sometimes available at the food bank, I have yet to see anyone get any Olive oil. I have some of my own from before the time I needed to use the food bank.
Recipe
Wash potatoes and do not remove the skins. Microwave according to amount of potatoes you have, or boil until soft.
Add a bit of oil, some salt, pepper and other spices and eat
warm, or refrigerate until cold and serve with soup and sandwich.
