Purely Idaho Potato Salad

1 Package Purely Idaho potatoes (Roasted Onion flavour)
2 Tbs mayonnaise (or more to taste)
1 stalk celery (cut fine)
1 green pepper (cut fine)
bit of pimento if available.
1 tsp Onion flavour packet (from potato package).
Paprika

A couple of weeks ago these small cartons appeared in the food bank that looked like
they were some sort of microwavable meal product. It turns out that they were not, nor
were they for the microwave. In the sealed plastic trays were cooked and chopped potatoes
that were ready to eat when at room temperature. Inside the tray, and under the potatoes
was a flavour packet, in this case 'Roasted Onion flavour' to add to the potatoes if you wanted to fry them.
However, once tasting this flavouring on its own, I decided instead to keep
it as a special spice and I filled one of my spare salt shakers with it as spices (other
than sauces are a rare find at the food bank I visit).
The onion flavouring packet goes good with many foods and one of these foods is the
potatoes that came with the packet that were already cooked and chopped. However, I
did not need to use the entire packet, just a half a teaspoon or so, for I had opted
not to fry these potatoes. Instead I made a potato salad out of them and as they were
already in the tray, the job was quite quick and I had side dish already in the tray!
Directions
Drain potato tray of liquids and add chopped vegetables, mayonnaise and about a tsp
of the flavour packet (keep the rest for other recipes. Mix well and serve, dust with paprika before serving.
You may choose to add other vegetables to this salad, since the potatoes are cooked
unpeeled, you might want to make a parisienne potato salad instead which uses oil instead
of mayonnaise.
