    Rice Medley ala Cream of Mushroom soup

    Recipe Introduction


    What does one do with Rice when they receive a bag of it from the food bank? Well the first thing I do, is rinse all of it and cook it. Then I can put it in freezer bags and microwave it when needed. One nice side dish is Rice Medley
    and I make it when I want to have a bowl of Cream of Mushroom soup because I can make two dishes with it.

    Cream of mushroom soup can be used for many dishes as a filler or for flavouring. Once I microwave my cooked rice
    and toss it in a bowl, I heat up some peas, and add a tablespoon or two of the soup concentrate. Thus, Rice Medley.


    List of Ingredients


    • 2 Tbs Cream of Mushroom soup concentrate (needed)
    • 1/2 cup peas (needed)
    • 1 cup cooked rice (needed)
    • Butter, margarine, salt /pepper for flavouring (needed)


    Instructions


    1. Open can of Cream of Mushroom soup. Remove 2 tablespoons and put aside, you might also want to 'pickout' a few mushroom pieces and put them in the bowl also.

    2. Prepare can of soup as you would any other, remembering to put less water in since you removed the concentrate.

    3. Cook peas in the microwave or a separate pot, add to bowl with soup concentrate.

    4. Cook rice in microwave, or boil bag, then add to bowl with soup concentrate and peas. Stir thoroughly and add a dash of salt and pepper.

    5. Top with a few pats of butter or margarine if you prefer.

    6. Eat rice as a side dish for your main course, have soup as an appetizer.



    Final Comments


    Good with Eds roasted chicken. Cooked rice does not stay well in the fridge unless in an airtight container. Even then, you could get pockets of mold if the rice has air gaps in it. It is easier to freeze it.
