    Sometimes there will be an overabundance of product that you might receive. You might receive a certain vegetable that is in season and is overabundant. This week I got a lot of Green Peppers. One of the things you can do with Green Peppers is to stuff them. However not all are in good shape to be stuffed. Some might need trimming due to cosmetic defects.

    NOT MOLD - TOSS MOLDY VEGGIES! (unless you are absolutely certain mold has not grown into the area you want to use, mold grows invisible at least an inch or more away from its green surface 'flowers'. It is always safer to throw out the entire vegetable unless you plan on spending a day with cramps and sickness)

    Once defects have been discarded, slice these peppers into various sizes and flatten them into a roasting pan. Then roast peppers for about an hour at 350 degrees, until they are slightly blackened, but still green on one side.

    Roasted peppers can be spiced, flavoured or even put in vinegar and stored if you know how to bottle preserves in Mason jars etc. (this is somewhat labour intensive).

    They make a nice side dish and can be kept in the refrigerator for up to a week.
