Balsamic Chicken (Sue Freeman)
List of Ingredients
3 lbs. boneless chicken breasts
3 T. oil
1/2 cup flour
1 cup chicken broth
1/2 cup chopped onion
3/4 cup sliced button mushrooms
1/4 cup balsamic vinegar
1/2 tsp. rosemary
1/2 tsp. thyme
2 oz. black olives
Salt and Pepper to taste
Recipe
Heat oil in a skillet. Salt and pepper chicken breasts and dust with flour. Brown the chicken in the oil and set aside. Add onions and mushrooms to skillet and cook until wilted. (If you want a thicker broth, add a little flour to onion mixture and stir into vegetables.) Return chicken to the pan and add balsamic vinegar, chicken broth, rosemary, thyme and olives. Adjust seasonings. Cover and simmer for 20-25 minutes until done. If broth reduces too much, add some more chicken stock and balsamic vinegar in 4 to one proportions.
Served with steamed rice.
