Coffee Cake
This recipe is from Mom. It is just like a bakery coffee cake. It has a thick topping. It is also very moist and makes a large cake. Make the crumb topping in advance. It needs to be refrigerated for a day or frozen for 2 hrs.
List of Ingredients
- ********CRUMB TOPPING**********
- 3 Sticks Margarine
- 2 1/4 Cups Sugar
- 3 Cups Flour
- 1 1/2 tsp Cinnamon
- ********CAKE*******
- 1 stick margarine
- 8 oz cream cheese
- 1 1/4 cups sugar
- 2 eggs
- 1 tsp vanilla
- 2 Cups flour
- 1 tsp Baking powder
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
- 1/4 Cup milk (Goes in last)
Instructions
- MAKE CRUMB TOPPING-- Put into refrigerator overnight or in the freezer for 2 hrs before making the cake. The cold helps the crumbs from "Sinking"
- Mix Topping Ingredients until well incorporated (should hold together) Refrigerate Overnight
- Preheat oven to 350. Grease and flour a 9 X 13 or larger pan
- Mix marg with cream cheese. Add sugar, mix well. Add eggs and vanilla Blend.
- Sift together the flour, B powder, B soda and salt.
Add to the creamed mixture.
- Mix in milk. Mixture will be thick!
- Spread into the prepared pan.
- Take crumbs out of freezer and lightly crumble over the dough.
- Bake for about 40 minutes. Do the toothpick test!
