    Spanish Rice


    List of Ingredients


    • 1 Cup Med Grain Rice
    • 2 Tbsp Oil
    • 1 lg Onion (chopped)
    • 1 lg Pepper (chopped)
    • 1 - 2 lbs ground beef
    • 1 can (28 oz) whole tomatoes
    • 1 tsp chili powder
    • 1/2 tsp garlic salt
    • 1/2 tsp garlic powder
    • 1/2 tsp Italian Seasoning
    • 1/2 tsp Cajun seasoning (optional)
    • 1/2 lb Velveeta or American Cheese


    Instructions


    1. In large skillet, Saute rice in oil (about 5 min)
    2. Add the meat, breaking it up and cook about 3 min.
    3. Add the pepper & onion. Mix well and cook til meat is done.
    4. Add tomatoes (cut up) (RESERVE the juice)
      Simmer for 5 min.
    5. To the reserved juice add enough water to make 2 1/2 Cups
    6. Stir in the spices, Simmer for 10 min.
    7. Stir in the Cheese and transfer to a greased casserole.
    8. Bake at 350 for 1/2 hr.


    Final Comments


    You can use 2 - 3 cloves fresh garlic and omit the garlic powder.
