Spanish Rice
List of Ingredients
- 1 Cup Med Grain Rice
- 2 Tbsp Oil
- 1 lg Onion (chopped)
- 1 lg Pepper (chopped)
- 1 - 2 lbs ground beef
- 1 can (28 oz) whole tomatoes
- 1 tsp chili powder
- 1/2 tsp garlic salt
- 1/2 tsp garlic powder
- 1/2 tsp Italian Seasoning
- 1/2 tsp Cajun seasoning (optional)
- 1/2 lb Velveeta or American Cheese
Instructions
- In large skillet, Saute rice in oil (about 5 min)
- Add the meat, breaking it up and cook about 3 min.
- Add the pepper & onion. Mix well and cook til meat is done.
- Add tomatoes (cut up) (RESERVE the juice)
Simmer for 5 min.
- To the reserved juice add enough water to make 2 1/2 Cups
- Stir in the spices, Simmer for 10 min.
- Stir in the Cheese and transfer to a greased casserole.
- Bake at 350 for 1/2 hr.
Final Comments
You can use 2 - 3 cloves fresh garlic and omit the garlic powder.
