    Crab Cakes

    This recipe is from The Mad Batter Restaurant in Cape May NJ


    List of Ingredients


    • 1 lb cleaned crab meat
    • 1/2 cup minced red pepper
    • 1/3 cup minced celery
    • 1/4 cup minced red onion
    • 1/2 cup mayonaise
    • 1/2 cup fresh bread crumbs
    • 1 Tbsp chopped fresh parsley
    • 1 tsp Old Bay Seasoning
    • 1/2 tsp salt
    • 1/2 tsp dry mustard
    • 1/4 - 1/2 tsp hot pepper sauce
    • ***2 cups fresh bread crumbs*** to coat the pattys
    • **************************************************************
    • For the Sauce:
    • 1 red pepper
    • 1/2 cup mayo
    • 1 Tbsp lemon juice
    • 1/2 tsp minced garlic


    Instructions


    1. Combine the above ingredients. Form into 8 pattys. Coat with crumbs. Refrigerate for 1 - 2 hrs.
    2. Heat oven to 400. Roast a red pepper for 30 min until charred. Wrap in foil and cool. Remove skin and seeds and chop fine. Combine with 1/2 Cup mayo, 1 Tbsp lemon juice, 1/2 tsp minced garlic and spread on both sides of a fresh roll.
    3. Heat 1/4 inch oil in a skillet. Cook Crab Cakes til golden turning once. approx. 8 minutes
    4. Place crab cakes on the prepared rolls and top with lettuce, tomatoe and red onion if desired.
