Casserole Chicken
5 chicken breast boneless, skinless and cut into bite size pieces.
3 cans cream of chicken soup
1 can sliced mushrooms
1 tsp curry
salt and pepper
juice of 1 fresh lemon
1 sm jar pimentos
1 sm can sliced water chestnuts
1/2 -1 cup grated cheddar cheese (as much as you like)
1/2 white wine (optional but adds a great flavor)
1 cup real mayo
saute chicken in non stick pan with a little salt and pepper. In large bowl mix all ingredients including cooked chicken. Transfer to casserole dish and bake uncovered 350* (preheated) for 30-40 minutes .
