Meatloaf with Hash Browns

2 c. shredded hash brown potatoes (I just used
frozen)
1 c. Italian seasoned breadcrumbs (do not use
plain)
1 c. chopped onion
1/2 c. ketchup
1/4 c. Dijon mustard
1/2 tsp. salt
2 lg. eggs -- lightly beaten
2 garlic cloves -- minced
2 lbs. lean ground beef
cooking spray
1/3 c. ketchup
Preheat oven to 375*. Combine potatoes, breadcrumbs, onion, ketchup, mustard, oregano, salt, eggs and garlic in a large bowl and stir mixture well. Crumble ground beef over potato mixture and stir just until blended. Shape mixture into an 8 1/2 by 4 1/2 inch loaf. Place loaf in an 11 by 7 baking dish coated with cooking spray. (or just use a meatloaf pan) Spread 1/3 c. ketchup over top of loaf. Bake at 375* for 1 hour and 15 minutes. Let stand 5 minutes before slicing.
