Wonton Soup
WONTON SOUP
1 lb. wonton wrappers (about 100 sheets)
46 oz. chicken broth plus 1/2 cup water
1 lb. ground pork
1/2 lb. shrimp, chopped
1/2 cup chopped water chestnuts
1 stalk scallion, chopped
1/2 tsp. fresh ginger, chopped
1/2 tsp. salt
2 tsp. sesame oil
1 tsp. rice wine or other white wine
3 Tbsp. soy sauce
Mix all ingredients except wrappers and broth and water. Wrap in wontons.
Boil 2 qts water. Add wontons, cook over high heat. Wontons will float to surface when done. (About 1 minute.) Drain wontons immediately. Bring brothe to boil, add wontons and remove from heat. Serve wontons and broth in individual bowls garnished with chopped scallions and a dash of sesame oil.
