Italian Wedding/Meatball Soup
Recipe Introduction
Tradition has it that you sprinkle grated Parmesan Romano Cheese on top of this Make sure you use GOOD cheese not the canned stuff.
List of Ingredients
- 1 lb ground beef
- 1 lb ground pork
- 2 eggs
- 3 cloves garlic (minced)
- 1 sm onion minced
- 1 1/4 cup Italian Bread crumbs
- 4 Tbsp fresh parsley
- 1/3 cup water
- salt and pepper to taste
- 1 - 2 bunches escarole or spinach
- 3 qts. chicken broth
- 1 cup dry Orzo Pasta
Instructions
- Wash the escarole and tear into pieces
- Mix the 1st 8 ingredients and form into very smallmeatballs.
- Bring the chicken broth to a boil.
- Add the meatballs a few at a time. Bring to a boilafter all the meatballs have been added. Cover andsimmer for 1 hour.
- Add the escarole and the pasta and continue simmering for 15 min.
Final Comments
Serve at once. You can freeze any leftovers.
