    3 cans (15 oz.) blackeye peas with Jalapeños, drained
    3/4 cup oil
    1/4 cup vinegar
    1 clove garlic, chopped fine
    2 oz. jar pimentos
    Cracked pepper to taste

    Recipe



    Mix everything together and marinate in refrigerator overnight. Serve cold with thick tortilla chips. Store covered in refrigerator.
