    SPREAD: Tuscan Spread

    List of Ingredients

    2 cans garbanzo beans, drained and rinsed
    4 oz sun-dried tomatoes, reconstituted
    10 small garlic cloves, peeled
    1 cup fresh basil leaves, well packed
    1 cup olive oil
    1 cup cold water
    salt and freshly ground black pepper, to taste

    Recipe

    Place beans, tomatoes, garlic, basil, and half of oil and water in a food processor. Puree. Gradually add additional oil and water until smooth. (I find it unnecessary to add all the oil and water.) Serve with pita, or chunks of crusty Italian bread, cut-up vegetables, crackers, tortilla chips.
