    List of Ingredients




    1 tbsp garlic butter with olive oil (Land O Lakes or Sam's brand)
    3/4 pound beef top round, 1/2" thick, cut into 1" cubes
    1/2 cup carrot, chopped
    1 1/2 cups butternut squash, peeled, cut into 1/2" cubes
    6 dried peaches, quartered (or dried apricots)
    1 can beef broth, ready to eat (14.5 oz)
    1 can stewed tomatoes (14.5 oz) undrained
    1 can corn, whole kernel, canned (7 oz) drained
    1 tsp oregano
    1/2 tsp salt
    2 tbsp chopped fresh parsley

    Recipe



    In a 2 qt saucepan, melt butter until sizzling. Add beef cubes. Cook over medium-high heat, stirring occasionally, until browned (about 3-4 minutes). Add all remaining ingredients except parsley. Continue cooking until mixture comes to a boil. Reduce heat to medium. Cover and cook, stirring occasionally, until beef and vegetables are tender (about 14 to 16 minutes). Stir in parley & serve. Makes 4 main course servings.
