While beer and soft drinks are the beverages of choice with meals in Southeast Asia, tea is also an option. This sweet iced tea is often served in Thai restaurants, and is a delicious drink for dinner and dessert. (from Thai Cooking Made Simple)
List of Ingredients
6 cups water
1 cup Thai tea leaves (cha Thai)**
1 cup sugar
1 can evaporated milk, half and half or fat free half-and-half
Recipe
Bring the water to a boil in a glass pot/pan. Add tea leaves, .......removing pot/pan from heat. Steep the leaves in the water for about 5 minutes, stirring the leaves a bit. Pour the tea through a FINE strainer into a large pitcher. Add sugar to the hot tea and stir to dissolve all of the crystals. Place pitcher in the refrigerator to cool.
When you're ready to serve the tea, fill a few glasses with crushed ice. Add tea to each glass until only a bit of room is left at the top, and top each glass with about 3 TBSP tablespoons of evaporated milk or half & half.
