Chocolate Cherry Almond Biscotti

1/2 cup light butter, softened
1 1/4 cups sugar
2 eggs
1 tsp almond extract
1 tsp kirsch (cherry flavored liqueur)
2 1/4 cups flour
1/4 cup cocoa
1 1/4 tsp baking powder
1/4 tsp salt
1/2 cup toasted almonds, chopped
1/2 dried cherries
GLAZE
1 cup Ghirardelli chocolate chips
1 tbsp shortening
Recipe
Preheat oven to 350°. Beat butter and sugar in large bowl until well blended. Add eggs, almond extract and kirsch. Beat until smooth. Stir together flour, cocoa, baking powder and salt. Gradually add to butter mixture, beating until smooth. (dough will be thick) Stir in almonds and cherries with spoon. Divide dough in half. With lightly floured hands, shape each half into rectangular loaf about 2x11" long. Place on large ungreased cookie sheet, at least 2" apart. Bake 30 minutes or until loaves are set. Remove from oven and cool on cookie sheet 15 minutes. Using serrated knife cut logs diagonally into 1/2" thick slices. Arrange slices, cut sides down, close together on cookie sheet. Bake 8 to 9 minutes. Turn slices over and bake an additional 8 to 9 minutes. Remove from oven; cool on cookie sheet on wire rack. Dip end of each biscotti in glaze or drizzle glaze over entire cookie. Makes about 30 biscotti.
GLAZE: Microwave chips in a glass measuring cup with shortening until melted & smooth.
