ABM: Special Banana Bread

Always looking for more things to make with bananas, I came across this recipe a few years ago. Noted on my recipe card is "wonderful & definitely make again!" Since I couldn't find the original recipe name I titled it "Special" because to me it wasn't just an ordinary banana bread -- it was one better! I think making it with the banana nut crunch cereal gives it that specialness. It's a great breakfast bread straight from the ABM or toasted. And though I haven't tried it yet, I think this would make terrific French toast!

List of Ingredients

1. Add ingredients to bread machine pan in the order recommended by the manufacturer:

3/4 c. warm water
1 c. mashed banana
1 t. sea salt OR kosher salt
2 T. butter, cut in small pieces & at room temp
3 T. orange blossom honey
2 T. instant dry buttermilk
2 c. Banana Nut Crunch cereal (Post Brand)
2 c. bread flour
1 c. whole wheat flour
2 T. yeast

2. If available, program machine for sweet dough cycle with a light crust setting.

Makes 1 large loaf. (1 1/2 lb loaf).
