    QUICK BREAD: Pear Bread

    List of Ingredients

    1/2 cup light butter (butter or margarine) softened
    1 cup sugar
    2 large eggs
    2 cups flour
    1/2 tsp salt
    1 tsp baking powder
    1/2 tsp baking soda
    1/4 tsp nutmeg
    1/4 cup plain yogurt, sour cream, buttermilk, or milk
    1 cup diced pears, take skin off
    1 tsp vanilla

    Recipe

    Cream butter and sugar. Then beat in eggs, one at a time. Mix together flour, salt, baking powder, baking soda & nutmeg. Add alternately to creamed mixture with yogurt (or what ever you choose - I like buttermilk). Stir in pears and vanilla. Spoon batter into one 9x5" or three mini (5 3/4x3x2 1/8") loaf pan(s). Bake in a preheat 350° oven for 55-60 minutes for the 9x5" pan or about 32-38 minutes for the mini loaves. Bread is done when toothpick tests done and nice & golden brown on top. This bread freezes beautifully.

    My Notes:
    I throw in a few (1/4 cup) dried cranberries. The mini loaves make for nice gift giving during the holidays.
