    Pumpkin Spice Bread - in jars

    These are baked in jars & make for great for gift giving!

    List of Ingredients

    Eight 1-pint wide-mouthed canning jars, *see Note

    3 1/2 cups packed light brown sugar
    1/2 cup butter, softened
    1 can solid-pack pumpkin (15 oz) not pie filling
    4 eggs
    3 1/2 cups flour
    1 1/2 tsp baking powder
    1 tsp baking soda
    1 tsp cinnamon
    1/2 tsp ginger
    1 cup chopped pecans

    Recipe

    Preheat oven to 325°. Coat inside of canning jars with nonstick cooking spray. (From experience I'd grease really well with butter flavored Crisco) In a large bowl, beat brown sugar & butter for 3 to 4 minutes, or until well blended. Add pumpkin & eggs. Beat for 2 minutes, or until well mixed. Add flour, baking powder, baking soda, cinnamon, & ginger. will be using pumpkin pie spice in place of the named spices Beat for 1 to 2 minutes, or until well blended. Stir in pecans, then spoon evenly into the canning jars. Place jars on a baking sheet. Bake for 45 to 50 minutes, or until a wooden toothpick inserted in the center comes out clean. Carefully place lids on jars & seal while still hot. Allow to cool completely before opening. Makes 8 mini loaves

    To serve: Slide bread out of jars & slice.


    Mr. Food Notes: Even though this batter can also be baked in two 5x9" loaf pans (add about 20 minutes to baking time), the nice thing about making it in canning jars is that they're great take-along gifts. Adding a colorful ribbon & a decorative label is the perfect way to show somebody how special he or she is!
