    QUICK BREAD: Quick Coconut Bread

    List of Ingredients

    4 cups flour
    1/3 cup sugar
    2 tsp baking powder
    1/4 tsp salt
    1 egg, beaten
    1 cup canned coconut milk, or fresh coconut milk or whole milk
    1/2 cup butter or margarine, melted
    1 tsp vanilla extract
    2 cups unsweetened coconut meat, grated
    1 cup currants, or raisins (I use mini chocolate chips instead!) optional

    Recipe

    Preheat oven to 350°. Sift the dry ingredients into a mixing bowl. Blend in egg, milk, butter, and vanilla. Mix in the grated coconut and/or currants or raisins. Turn out onto a floured board and knead slightly. Shape into 2 loaves and pat into 2 buttered medium loaf pans. Bake 40-45 min, until a toothpick in the center comes out clean. Makes 2 loaves.
